Darn, something told me to pick up those tortillas last night.AJhttps://www.blogger.com/profile/06022222693652826883noreply@blogger.comtag:blogger.com,1999:blog-4464936301082996795.post-7526655407829020722008-04-15T13:01:00.000-04:002008-04-15T13:01:00.000-04:00OK I am going to attempt to explain how to make th...OK I am going to attempt to explain how to make the beef enchilada's:<BR/>You will need:<BR/>12 corn tortillas<BR/>1lb ground beef<BR/>4-7oz can of diced green chilies<BR/>chopped onion to taste<BR/>1 can Rosarita Mild Enchilada Sauce<BR/>2+ cups of shredded cheese<BR/>Pam<BR/>Shredded lettuce, diced tomatoes sliced olives, sou cream and guacamole to top when done<BR/>Preheat oven to 350<BR/>Spray 13x9 dish with Pam<BR/>Brown ground beef and drain, mix in green chilies and onion.<BR/>Heat sauce in a sauce pan.<BR/>Place tortillas in damp paper towel and microwave on high for 1 minute. (I actually heat vegetable oil and cook tortillas for 20-30 seconds on each side)<BR/>Dip a tortilla in sauce place in dish and add beef mixture and some cheese inside tortillas and roll up seam side down.
