Grand Ideas

I have heard that good intentions pave the path to Hell. I hope this isn't really true. You see, it is always my intention on Sundays to prep meals for the coming week. If you noticed, the name of this blog is The Slacker Kitchen. Yep, inevitably, my slacker gene kicks in sometime Sunday afternoon and I just don't feel motivated to do anything let alone cook. Yesterday was no different. I did a job for a friend (getting paid for it) and that was bout it for the day. I had taken out ground beef and ground turkey as well as a pair of pork chops. I had no idea what I was going to do with any of it. Well, there was still the leftover StoveTop to eat so I figure I'd just bake the pork chops for mine and MJ's lunches. That really didn't require any work. Now, those ground meats require some thought. I'm still kinda keen on the idea of a mini burger burrito. And I saw a recipe recently for homemade sloppy joes. I think that would be a great way to add flavor and keep the ground turkey moist.

See, grand ideas. Stay tuned to see what happens with the ground meats. Also, let me know what you do that is quick, easy and tasty with ground beef and ground turkey.

Meatloaf, quesadillas, soup if I'm not going the hamburger patties route. Haven't had sloppy joes in a while so those sound good. One day I'm going to learn how to make Jamaican beef patties and life will be good.

Since I have 6lbs of ground beef in the freezer I thought I would share my plans for it. I plan on making Mexian Stuffed Shells, Tacos, Chili Mac, Enchilada's and Meatballs. Have fun coming up with quick and tasty meals for your ground meat.

Cool blog! I have a cookie recipe for you if you want it. Not sure where to put it though. Hellllp meeeee, I'm a novice at blogging! :) Sorry, I don't have any innovative ideas for ground meat, it was plain ol burgers on the grill tonight here. (first grilling of the season - yay!)

OK I am going to attempt to explain how to make the beef enchilada's:
You will need:
12 corn tortillas
1lb ground beef
4-7oz can of diced green chilies
chopped onion to taste
1 can Rosarita Mild Enchilada Sauce
2+ cups of shredded cheese
Pam
Shredded lettuce, diced tomatoes sliced olives, sou cream and guacamole to top when done
Preheat oven to 350
Spray 13x9 dish with Pam
Brown ground beef and drain, mix in green chilies and onion.
Heat sauce in a sauce pan.
Place tortillas in damp paper towel and microwave on high for 1 minute. (I actually heat vegetable oil and cook tortillas for 20-30 seconds on each side)
Dip a tortilla in sauce place in dish and add beef mixture and some cheese inside tortillas and roll up seam side down. Repeat for remaining tortillas.
Pour remaining sauce over rolled tortillas and sprinkle with cheese.
Bake covered for 30 minutes
Add toppings and enjoy
*For quick guacamole: mash up an avocado, mix in 1-2 teaspoons of RoTel Salsa and add salt to taste.
